If you can't find a school that covers all these things then try and find them in individual schools in your area.
The second thing, and most overlooked is conditioning. Conditioning is huge in mixed martial arts. Fights are draining and if you aren't in good shape then your gas tank will run out very fast and you will get beat up on. That's no fun, believe me. Make sure that you start a good conditioning program as soon as possible.
